Tasting Note
Citrus and stone-fruit (apple, pear) with floral top notes, toasted-vanilla oak and firm mineral salinity. Medium-plus weight, rounded mid-palate and a lively, saline finish.

Western: scallops, grilled/poached fish, risotto, roasted veal, poultry, Comté or soft cheeses. Asian: miso-glazed cod, sushi/ebi nigiri, creamy coconut Thai dishes, lightly spiced Chinese white-meat dishes.

Production Method
Hand-harvested Chardonnay, slow/soft pressing, native-yeast fermentation with some oak maturation and limited bâtonnage; produced under sustainable/traditional practices.

Domaine Rijckaert, founded by Jean Rijckaert in 1998 (Belgian origin); vineyards in the Mâconnais and Jura. Florent Rouve took over winemaking leadership in 2013.
