Tasting Note
Oxidative, powerful and dry: toasted walnut, hazelnut, dried apricot, beeswax, curry spice and tangy almond with saline minerality and very long finish.
Food Pairing
Western: Comté, chicken (coq) au vin jaune with morels, roast poultry, foie gras. Asian: spicy curry, soy-glazed fish, richer dim-sum or mushroom-based dishes.
Production Method
Savagnin fermented (native yeasts), then aged in oak barrels without topping (under a voile) for minimum 6 years 3 months; bottled in 62 cl clavelin.
