Tasting Note

Medium-full Savagnin: lemon peel, quince, green apple, waxy/bergamot notes, walnut and brown-butter undertones, saline minerality and bright acidity with a long savory finish.


Food Pairing

Western: Comté or Morbier, roast/Bresse chicken, veal blanquette, mushroom risotto, seared scallops. Asian: miso-glazed cod, sushi/seafood with citrus, soy-mirin braised mushrooms, mildly spiced Thai or Vietnamese seafood dishes.


Production Method

Spontaneous fermentation in neutral barrels, ~11 months on the lees with regular topping to control oxidation; made to preserve varietal fruit rather than full Vin Jaune oxidative élevage.
