Tasting Note
Golden, savory Savagnin showing orchard and citrus fruit, toasted almond, white pepper and gentle oxidative/yeasty notes. Full-bodied, saline-mineral core with spicy, long finish — classic Jura character with attractive tension and freshness.
Food Pairing
Western: Comté or Mont d'Or, roasted/creamy poultry (Bresse chicken, morel sauce), mushroom risotto, roasted pork, buttered trout. Asian: miso-glazed cod, soy-steamed fish, sushi/sashimi, Chinese-style steamed seafood, milder Thai coconut dishes.
Production Method
Sustainably farmed; hand-harvested. Fermented and aged in old oak barrels with extended élevage (~22–24 months) producing a gently oxidative/under-voile, saline profile.
