Tasting Note
Dry, intensely aromatic Savagnin — citrus, ripe pear and mango with toasted nuts, brioche creaminess and saline minerality. Vibrant acidity and a savory, lingering finish.

Western: Comté, roasted chicken or veal blanquette, asparagus tart, creamy mushroom risotto. Asian: sushi/ sashimi, miso-glazed fish, Thai green curry, Cantonese steamed fish, Korean banchan, aged soy-marinated dishes.
Production Method
Hand-harvested; native-yeast fermentation with spontaneous malolactic; aged 10–15 months in used oak barrels and stainless vats; ouillé (topped-up) style, minimal intervention.
