Tasting Note

Citrus and ripe peach with green mango, white pepper and toasted nuts; saline and slightly creamy texture, precise high acidity and medium–full body with a lingering, savory finish.

Western: Comté and aged cheeses, roasted or grilled fish, scallops, chicken in cream sauce, asparagus risotto. Asian: miso‑glazed black cod, sashimi/sushi, steamed fish with ginger‑soy, tempura, dim sum.


Production Method

Hand‑harvested; fermented with native yeasts; spontaneous malolactic fermentation; aged approximately 15 months in used oak barrels with minimal lees stirring.

Founded by Jean Rijckaert in 1998; holdings in Mâcon and Arbois. Now managed by Florent Rouve, the estate is in organic conversion with low‑intervention viticulture and gentle cellar handling.
