Tasting Note
Ripe yellow apple and citrus (bergamot), white flowers, almond and subtle bready/yeasty notes; saline minerality, medium‑full body and a long, slightly bitter finish.

Western: Comté and other mature cheeses, roasted veal or chicken, pâté en croûte, charcuterie. Asian: miso-glazed cod, soy-ginger pork, grilled eel (unagi), richer sushi (seared fish) and mushroom-based dishes (shiitake).
Production Method
Hand-harvested Savagnin fermented with indigenous yeasts; portion fermented/aged in oak, long élevage (c.18–26 months) on lees in old barrels with minimal bâtonnage.

Founded by Jean Rijckaert (1998); estate farms c.5 ha in the Jura (Arbois) with organic/low-input practices; Florent Rouve manages winemaking from the Villette‑les‑Arbois cellar.
