Tasting Note
Lush honeyed apricot, orange marmalade and pineapple with tropical fruit, lanolin and minty-herb notes; vivid citrus acidity balances intense sweetness, finishing long, saline and honeyed.
Food Pairing
Western: foie gras with brioche, blue cheeses (Roquefort), tarte Tatin, crème brûlée. Asian: Peking duck, char siu (Cantonese roast pork), spicy Thai or Sichuan dishes, mango sticky rice.
Production Method
Hand-harvested in multiple selective passes for botrytised grapes; fermented in oak barrels and aged in oak (c.18–24 months) to concentrate botrytised sweetness.
