Tasting Note
Bright citrus and tropical aromas (passion fruit, lemon, lime) with white flowers, subtle oak and buttery notes, flinty minerality, lively acidity, round mid‑palate and a long, saline-tinged finish.

Food Pairing
Western: grilled lemon-thyme chicken, baked salmon with dill and lemon butter, mushroom risotto, goat-cheese salad. Asian: soy-ginger prawns, sushi/sashimi, mildly spiced Thai green curry, steamed fish with ginger and scallions.

Production Method
Hand-harvested; fruit chilled before gentle pressing, cold settling; Sauvignon mainly fermented in stainless steel, part of Sémillon in new/used oak; aged on lees for ~6 months with bâtonnage, then blended.
