Tasting Note
Dry, pale yellow; grapefruit, bergamot and lime citrus, white peach, subtle flinty/mineral notes, light buttered-oak texture and a zesty, medium-length finish.

Food Pairing
Oysters, scallops, grilled prawns, buttered Dover sole, roasted chicken with creamy parmesan, mild goat cheese; Asian: sashimi/sushi, Vietnamese creamy curry, Thai green curry, steamed white fish with ginger and scallion.

Production Method
Hand-harvested; refrigerated crates, gentle pressing and cold settling. Majority stainless-steel fermentation with ~20% barrel fermentation/aging to add cream and spice.
