Tasting Note

Apple and white-peach fruit with herbal lift, light vanillin oak, chalky minerality and saline bite. Medium-bodied, bright acidity and a mouthwatering, focused finish.


Food Pairing

Roasted chicken, mushroom risotto, creamy pasta; grilled sea bass, miso-glazed black cod, sushi (fatty tuna), Chinese steamed sole with ginger and scallion.


Production Method

Whole-cluster pressed, native-yeast fermentation in French oak (≈10–15% new), 12 months in barrel then months in stainless; minimal batonnage, low-intervention/biodynamic practices.
