Tasting Note
Ripe cassis, black cherry and redcurrant with violet and graphite notes. Medium–full body, supple, juicy black-fruit core, fine-grained tannins, tobacco and baking-spice on a long, spicy finish.
Food Pairing
Roast or grilled beef, lamb chops, duck confit, braised short ribs; Asian: Peking duck, char siu, Korean BBQ (beef bulgogi), spicy Sichuan beef, miso-glazed aubergine.
Production Method
Grapes fermented in stainless steel vats with careful parcel selection; second-selection lots blended and aged in oak barrels (limited new oak) for élevage before bottling (approx. 12–18 months).
