Blackcurrant and black cherry with violet, cedar, graphite and subtle spice. Medium-bodied with bright acidity, fine-grained tannins and a savory, earthy finish.

Production Method

Hand-harvested; destemmed and fermented in temperature-controlled stainless-steel vats (18–24 days); aged ~12 months in French oak (≈25–30% new); egg-white fined prior to bottling.
