Tasting Note

Perfumed violet and dark-berry aromas with black raspberry, cassis, spice and smoked-mineral notes. Silky texture, fine-grained tannins, vivid acidity and an expansive, saline-tinged finish of spice and floral lift. Ageworthy and elegant.

Western: roast lamb, beef short ribs, duck confit, aged hard cheeses. Asian: Peking duck, Korean BBQ (bulgogi), char siu, Sichuan pepper beef.


Production Method

Hand-harvested; long maceration (≈4 weeks) with high whole‑cluster percentages, native yeasts; aged ~18 months in mostly used demi‑muids (minimal new oak).
