Tasting Note
Bright red and black cherry, blueberries, chalky minerality, spice, cedar and cocoa. Medium–full-bodied with refined, fine-grained tannins, fresh acidity and a long, polished finish.
Food Pairing
Western: roasted lamb, grilled ribeye, aged Manchego, game (venison). Asian: char siu, Peking duck, miso-glazed aubergine, Korean BBQ (bulgogi) and richer teriyaki dishes.
Production Method
Hand-harvested field blend; spontaneous/native yeast fermentation in wooden vats; aged ~30 months in French oak (225L, 500L) and 1,500L foudres.
