Tasting Note
Intense golden white with yellow fruit, pollen, aromatic herbs, chalky/mineral sea-shell notes, light smoke and spice; textured, broad palate with bright acidity and very long, precise finish.

Food Pairing
Western: roasted/grilled white fish, shellfish, scallops, roasted chicken, pork loin, creamy pasta, mature goat/soft cheeses. Asian: sashimi/sushi, miso-glazed cod, tempura prawns, Thai green curry, Chinese steamed fish with ginger and spring onion.

Production Method
Organic/biodynamic viticulture; separate fermentations with indigenous yeasts in concrete, foudre and barrique; ~12 months élevage in old oak/foudres/concrete eggs, then ~8 months assembly in tank.
