Tasting Note
Aromas of dark cherry, black raspberry, rosemary, truffle, tobacco and cedar. Full-bodied, chewy yet refined tannins, lively balsamic acidity, mineral undertone and a very long, savory finish.
Food Pairing
Western: roast lamb, grilled ribeye, beef stew, mushroom risotto, aged Manchego and cured meats. Asian: Peking duck, Cantonese char siu, Korean bulgogi, spicy Sichuan beef, Japanese sukiyaki.
Production Method
Hand-harvested; organic/biodynamic viticulture. Spontaneous fermentation with native yeasts in small wooden vats; aged ~28–29 months in mixed-size oak barrels and fudres; bottled May 2014.
