Tasting Note
Concentrated black cherry and blackberry with cedar, tobacco, graphite and sous-bois notes. Silky, polished tannins, savory spice and dark chocolate; long, elegant, mineral-tinged finish.

Food Pairing
Roast lamb, beef côte de boeuf, game birds, mushroom risotto; Asian: Peking duck, char siu or Cantonese roast pork, Korean BBQ short ribs, shiitake and black bean stir-fry.

Production Method
Hand-harvested, parcel vinification in temperature-controlled vats; long maceration and malolactic fermentation; aged ~14–18 months in French oak (significant new oak) with a small portion in amphorae.
