Tasting Note
Pale salmon rosé with wild strawberry, white peach, citrus zest and saline minerality. Creamy mousse, fine chalky texture, subtle red-berry spice and a long, vibrant finish.

Food Pairing
Western: shellfish, smoked salmon, salads, roasted chicken, charcuterie, cured ham. Asian: sushi/sashimi, tempura, grilled prawns, lightly spicy Thai or Vietnamese dishes, miso-glazed fish.

Production Method
Traditional method (secondary fermentation in bottle), aged ~18 months on lees; very low dosage (extra brut). Grapes vinified in stainless steel; biodynamic viticulture.
