Tasting Note
Pale salmon-pink with fine mousse. Aromas of wild strawberry, blood orange, orange blossom and gentle smoke. Tense, saline minerality, raspberry and white-fruit notes, full-bodied yet elegant with a long, savory finish.

Western: smoked or grilled salmon, tuna tartare, shellfish, ceviche, roasted pork, charcuterie, paella. Asian: sushi/sashimi, tempura, spicy Thai salads, Korean fried chicken, pork belly bun (bao).

Production Method
Traditional method (bottle fermentation) — varieties fermented separately in stainless steel, blended, then aged on lees ≥18 months; gentle pressing and native yeast fermentations.

Raventós i Blanc is an historic family estate in Sant Sadurní d'Anoia (winemaking since 1497). They focus on native varieties, estate farming and sustainable/biodynamic practices, and left DO Cava to define Conca del Riu Anoia.
