Pale amber-tawny. Flavors of dried apricot, orange marmalade, toasted almond, caramel and vanilla with honeyed, spicy undertones. Silky texture, balanced acidity and a long, savoury-sweet finish.
Food Pairing
Western: aged cheeses (Manchego, Stilton), crème brûlée, almond tart, foie gras, roasted pork. Asian: Peking duck, char siu (Cantonese roast pork), mooncakes, Thai mango sticky rice, glazed duck bao.
Production Method
A blend of wines from Quinta do Bom Retiro fortified with grape spirit to stop fermentation, matured an average of 20 years in old oak casks in the producer's lodges to develop oxidative tawny character.
