Tasting Note
Ripe black cherry, plum and wild blueberry with violet, dark chocolate, graphite and tobacco notes; mineral, saline backbone, firm grainy tannins, medium–full body and a long, savory finish.

Food Pairing
Western: roast lamb, grilled beef, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean BBQ, Chinese braised beef, shiitake mushroom hot pot.

Production Method
Certified organic farming; fermented on skins and matured about 15 months in French oak (≈30% new).
