Tasting Note
Perfumed black and blue fruits, cracked black pepper, olive and smoked‑meat notes with oriental spice; medium‑full body, grainy texture and a fresh, tart finish.

Western: grilled lamb chops, roast beef, braised short ribs, charcuterie, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), char siu, spicy Sichuan beef, Malaysian rendang, teriyaki beef skewers.

Hand‑harvested; cold soak; natural yeast fermentation with ~20% whole‑bunch; extended skin contact; malolactic in oak; aged 18–19 months in used barriques; bottled unfined/unfiltered.
