Tasting Note
Cool-climate Pinot Noir with red cherry, raspberry and wild strawberry, hints of spiced mulberry and graphite; fine-grained, powdery tannins and bright acidity, elegant and medium-short finish.

Food Pairing
Roast duck, lamb, mushroom risotto, grilled salmon; Asian: Peking duck, miso-glazed black cod, teriyaki chicken, Korean bulgogi, shiitake stir-fry.

Production Method
Hand-harvested; partial whole-berry fermentation in open-top fermenters, 15-day maceration, basket-pressed; ~12 months on lees in mainly 3rd/4th-fill Burgundian barrels (10% new).
