Tasting Note
Perfumed red berries (strawberry, cherry) with musk, light earth and fynbos. Silky, satin texture, bright acidity, powdery fine tannins and a clean mineral lift to a long, elegant finish.
Food Pairing
Western: roast/grilled salmon, roast chicken, mushroom risotto, charcuterie; Asian: miso-glazed black cod, teriyaki salmon, char siu or Korean BBQ (bulgogi), mushroom soba.
Production Method
Certified-organic Elgin fruit, minimal-intervention vinification (whole-berry/whole-bunch styles used), native yeast fermentation and 10–12 months maturation in French oak (c.10% new).
