Tasting Note
Perfumed red and black cherry, violets and pomegranate with subtle earth and spice; medium-bodied, zesty acidity, fine powdery tannins and a slightly tarry, persistent finish.

Food Pairing
Grilled/charcoal-seared lamb chops, braai/BBQ beef, roast pork, mushroom risotto; Korean BBQ (bulgogi), char siu, South African bobotie, teriyaki chicken, grilled shiitake mushrooms.

Production Method
Hand-harvested; many bunches destemmed, ~50% whole berries; partial carbonic fermentation in foudre and large oak, light basket-pressing, matured in 500–600L barrels with no new oak.
