Dense dark-berry and black-cherry fruit with savoury fynbos, cracked pepper, leather and spice. Velvety tannins, bright acidity and a concentrated, mineral-driven, savoury finish with long, aromatic persistence.
Food Pairing
Western: grilled ribeye, roast leg of lamb, venison, mushroom risotto, aged cheeses. Asian: Korean BBQ, spicy beef stir-fry, char siu, Peking duck, rich coconut or tomato-based curries (e.g., Massaman).
Production Method
Hand-harvested, co‑fermented on native yeasts with minimal intervention; short cold soak, open fermentation and ~15 months in mainly 1–4 year French oak (c.10% new). Usually bottled unfined/unfiltered.
