Bright straw-gold. Aromas of green melon, candied lime, Granny Smith apple, pineapple and white flowers over crushed-stone minerality. Medium-bodied, textural with brisk acidity, saline and menthol hints, subtle toasted oak spice and a long citrus-peel finish.
Food Pairing
Western: oysters, clams, scallops, grilled fish, seafood pasta, lemon-herb chicken, fresh goat cheese. Asian: sushi/sashimi, tempura, Thai or Vietnamese fish dishes, steamed Chinese fish, light curries.
Production Method
Long pressing of whole grapes; free-run must separated. Fermentation ~70% in stainless steel, ~30% in new oak barriques; aged 8 months on fine lees with periodic lees stirring.
