Tasting Note
Dark ruby with purple rim. Perfumed blackberries, violets, lavender, licorice and mocha. Silky, polished tannins, lively mineral freshness and a long, savory finish with herbal/balsamic hints.

Western: grilled/stewed red meats, braised beef, aged pecorino or Parmigiano, mushroom risotto, tomato-based pasta. Asian: Korean BBQ, char siu, Sichuan pepper beef, teriyaki steak, tandoori lamb.

Production Method
Certified organic viticulture; fermentation in stainless steel with controlled maceration, followed by ~12 months aging in oak barrels before bottling.
