Tasting Note
Bright orchard and stone fruit (nectarine, white peach) with honeyed apricot, toasted almond, saline minerality and a hint of vanilla. Silky, layered palate with lively acidity and a long, savory finish.

Food Pairing
Western: grilled or roasted white fish, scallops, creamy seafood pasta, porcini or pumpkin risotto, soft cheeses. Asian: sushi/sashimi, Thai prawn curry, Chinese steamed fish, Vietnamese fresh rolls.

Production Method
Hand-harvested; soft pressing. Fermented ~60% in new French oak and ~40% in stainless steel; aged eight months on the fine lees and rested in bottle for two years.
