Tasting Note
Black cherry and cassis with dark chocolate, thyme, sage, cedar and incense. Lively acidity, fine-grain tannins, savory tobacco and tar notes, finishing long, earthy and perfumed.
Food Pairing
Western: grilled ribeye, roast lamb, mushroom risotto, aged hard cheeses. Asian: Korean BBQ (bulgogi), Peking duck, Cantonese roast pork (char siu), spicy Sichuan beef or miso-glazed eggplant.
Production Method
Estate-grown; blocks farmed and vinified separately using organic/biodynamic practices. Aged about 22 months in French oak (≈76% new).
