Tasting Note
Bright red and black cherry, currant and plum with crushed herbs, sandalwood, clove and graphite; silky texture, fine-grained tannins, balanced acidity and a long mineral-tinged finish.

Food Pairing
Western: grilled ribeye, roast lamb, mushroom risotto, aged hard cheeses. Asian: Peking duck, Korean BBQ (galbi), char siu, miso-glazed black cod.

Production Method
Estate-grown fruit farmed biodynamically; small-lot fermentations, blended from estate blocks and matured in French oak barrels (estimate 18–22 months) before bottling.
