Tasting Note
Fragrant, textured white: beeswax, honeysuckle, white peach, nectarine and lemon curd with marmalade, candied ginger and litsea oil. Flinty minerality, bright acidity and a long, expressive finish.

Food Pairing
Western: grilled or roasted scallops, crab, citrus-cured ceviche, roast chicken, soft goat cheese. Asian: sushi/sashimi, miso-glazed salmon, Vietnamese spring rolls, Thai seafood salad, light seafood curries.

Production Method
Whole-cluster pressed; native-yeast fermentations in French oak, acacia, concrete eggs and amphora; bâtonnage prior to blending; aged in mixed vessels and filtered (not fined).

Quintessa (Rutherford) — founded by Agustin & Valeria Huneeus; estate farmed organically/biodynamically. Illumination is a limited-production Sauvignon Blanc blend sourced from estate and selected Napa/Sonoma blocks. Winemaker: Rebekah Wineburg.
