Tasting Note
Dense black fruits (blackberry, plum, fig), dark chocolate, spice and floral lift; ripe, firm tannins, concentrated mid-palate and a very long, savory finish with licorice and dried-fruit notes.

Food Pairing
Blue and aged cheeses, dark chocolate desserts, roasted/game meats, lamb; Asian: Peking duck, hoisin-glazed pork belly, soy-braised beef, spiced Malaysian rendang.

Production Method
Hand-harvested old-vine field blend; ferment ~4 days in granite lagares with periodic foot-treading (≈50% with stalks), fortified with grape spirit, aged ~20–21 months in stainless-steel vats, bottled unfiltered.
