Tasting Note
Fresh, intensely floral and citrus-scented with flavors of crystallized orange, honeyed apricot and orange peel; concentrated sweetness with a long, delicate finish.
Food Pairing
Western: blue cheeses, foie gras, citrus tarts, crème brûlée, nut-based desserts. Asian: mango sticky rice, mooncakes, sesame desserts, coconut or red-bean sweets. Also excellent as an aperitif mixed with tonic, ice and fresh herbs.
Production Method
Open (bica aberta) fermentation for ~20 days with no skin contact, fortified with grape spirit and aged about 3 years in stainless-steel vats.
