Tasting Note
Dense blackberry and black cherry with forest-floor, cardamom and sweet spice. Full-bodied with ripe polished tannins, vibrant acidity, toasted oak and a long, slightly bitter, velvety finish.

Food Pairing
Roast lamb, grilled ribeye, beef stew, mushroom risotto, aged Manchego or Serra da Estrela cheeses; Asian: Korean BBQ, char siu (Cantonese BBQ pork), teriyaki beef, Sichuan-style beef or savory lamb skewers.

Production Method
Temperature-controlled stainless-steel fermentation (24–28°C) with extended maceration; aged ~14 months in French oak barrels (predominantly new).
