Tasting Note
Citrine, fine persistent mousse; aromas of dried fruits, biscuit, toasted bread and white-fleshed fruit jelly. Fresh, fruity palate with crisp, crunchy mousse and long persistence.

Food Pairing
Oysters, ceviche, grilled shellfish, roasted chicken, soft cheeses (Brie), sushi and sashimi, tempura, steamed dim sum, light Asian seafood curries.

Production Method
Hand-harvested Arinto; whole-cluster pressing, fermentation at ~18ºC; traditional method (método clássico) with 48 months on lees and ~3 months post-disgorgement. Extra Brut dosage.
