Tasting Note
Citrine colour; intense aromas of dried fruit, biscuit, toasted bread, cereal and white-fleshed fruit. Fresh and fruity on the palate with pristine acidity, creamy fine mousse, full mouthfeel and a long, persistent finish.

Food Pairing
Oysters and shellfish, smoked salmon, seafood platters, shellfish risotto, grilled white fish, roast chicken; sushi, sashimi, tempura, dim sum, Vietnamese spring rolls, lightly spiced Thai seafood dishes.

Production Method
Whole-cluster destemming, gentle pneumatic pressing, static clarification, alcoholic fermentation at 18°C; secondary fermentation by the traditional (Méthode Classique), aged 48 months on lees and ~3 months after disgorgement.

Quinta do Encontro is a Bairrada estate (part of Global Wines) producing contemporary table and sparkling wines. Enologist Osvaldo Amado leads vinification; winery building opened in the 2000s and focuses on local varieties and classic-method sparkling production.
