Tasting Note
Crystalline pale-rose with fine persistent bubbles. Intense red-fruit aromas of cherry, strawberry and raspberry; fruity, elegant and harmonious palate with a lively mousse and fresh, clean finish.

Food Pairing
Western: smoked salmon, grilled prawns, seafood tapas, salads, roast chicken. Asian: sushi/sashimi, dim sum, mild Thai or Chinese dishes, tandoori chicken or lightly spiced Indian starters.

Production Method
Total destemming, gentle pneumatic pressing, natural static clarification, alcoholic fermentation at ~18°C. Secondary in-bottle fermentation (classical/traditional method); minimum cellar ageing ~6 months and ~1 month after disgorgement.
