Tasting Note
Fine, persistent mousse with citrus and white-fruit aromas, toasted brioche, dried fruit and gentle biscuit notes. Crisp, high acidity, zesty citrus backbone and long, saline finish.

Food Pairing
Oysters, shellfish, sushi and sashimi, tempura, grilled fish, roast pork (leitão), roasted poultry, soft and aged cheeses, dim sum, light Asian spicy dishes.

Production Method
Whole destemming, soft pneumatic pressing, alcoholic fermentation followed by traditional (méthode classique) secondary fermentation and extended lees ageing (≈36–48 months).
