Tasting Note
Deep black-fruit core (plum, blackberry) with wild-berry, cistus/rock-rose, spice and vanilla; firm ripe tannins, mineral backbone and a long, savory finish.

Food Pairing
Western: roast beef, lamb, venison, grilled steak, mushroom risotto. Asian: Peking duck, char siu, spicy Sichuan beef, Korean BBQ (galbi), rich yakitori.

Production Method
Hand-harvested old-vine field blend; de-stemmed, fermented in temperature-controlled stainless tanks; aged ~18 months in 85% French / 15% American oak; bottled unfined/unfiltered.
