Tasting Note
Fresh black and red fruits (blackberry, plum), violet and black pepper with toasted oak. Medium-bodied, lively acidity, soft, fine tannins and a smooth, lingering finish.

Food Pairing
Western: roast lamb, grilled steak, beef stews, aged cheeses. Asian: Korean BBQ, char siu/roast pork, Peking duck, spicy Sichuan beef, teriyaki beef skewers.

Production Method
Fermented in temperature-controlled stainless steel (~6 days), malolactic for ~2 weeks; matured ~10 months in 225L French oak (≈30% 2nd-use, 70% 3rd-use).
