Tasting Note

Dark cherry, Black Doris plum, blackberry, violet, thyme and warm spice over a stony mineral core; medium-full, silky texture with chalky tannins and a long, tense finish.

Production Method

Hand‑picked fruit, cold soak up to 7 days, 10–20% whole clusters, indigenous yeast fermentation, ~21 days on skins; aged 12–15 months in French oak (20–33% new), wild malolactic; bottled unfined/unfiltered.
