Tasting Note
Concentrated cherry, plum and wild berry with tea-leaf and dried herb layers, cedar oak and subtle Asian spice. Medium-full palate with firm chalky tannins, bright acidity and a long, mineral-tinged finish.

Western: roast duck, lamb, game, pork belly, mushroom risotto. Asian: Peking duck, char siu, miso-glazed salmon or eggplant, umami ramen, teriyaki dishes.

Estate, single-vineyard fruit; certified organic/biodynamic. Hand-harvested, small-lot fermentations with native yeasts, matured 12–15 months in French oak, bottled unfined and unfiltered.
