Tasting Note

Perfumed red-fruit core of raspberry, cherry and wild strawberry with rose and violet florals, crushed-rock minerality, baking spice and subtle earth. Silky yet chalky tannins, bright acidity and concentrated fruit deliver a long, layered finish.

Roast duck, lamb, mushroom risotto, beef bourguignon; pan-seared salmon, miso-glazed black cod, Peking duck, char siu, Korean BBQ, shiitake and soy dishes.


Production Method

Hand‑harvested, small-batch fermentations with indigenous yeasts after up to 7-day cold soak; 23 days on skins; aged 12 months in French oak (28% new); spontaneous malolactic; biodynamic/organic viticulture.
