Tasting Note

Deep ruby with dark cherry, black raspberry and plum, layered with wild thyme, star anise and sweet spice. Mineral edge, fine-grained silky tannins, lacy acidity and a long, broody finish.

Roast lamb, hare, duck, mushroom risotto, venison; Asian pairings: Peking duck, miso-glazed salmon, char siu pork, Korean bulgogi, shiitake soba.


Production Method

Estate-grown Bendigo fruit; hand-picked, cold-soaked, small-batch indigenous yeast fermentation with a small percentage whole clusters; matured in French oak barriques; certified organic/biodynamic.
