Tasting Note

Bright dark cherry and black-Doris plum, forest-floor and dried herbs, with anise, spice and subtle cedary oak. Silky tannins, zesty acidity and a long, vibrant finish.

Roast duck, lamb, mushroom risotto, pork belly, grilled/teriyaki salmon, seared tuna, miso-glazed aubergine, char siu or Korean BBQ, aged cheeses, earthy mushroom and truffle dishes.


Production Method

Certified organic/biodynamic estate fruit; hand-harvested, small-batch ferments with some whole-cluster, cold-soak and indigenous yeasts; aged 12–15 months in French oak (approx. 30–33% new) with wild malolactic fermentation.
