Tasting Note

Ripe red cherry and raspberry with floral violet and tea-like notes, forest‑floor and savory herbs, subtle spice and oak; silky texture, bright acidity and fine powdery tannins, culminating in a long, vibrant finish.


Food Pairing

Western: roast duck, herb‑crusted lamb, mushroom risotto, pork loin. Asian: Peking duck, char siu pork, miso‑glazed salmon, mushroom hot pot or soy‑braised dishes.


Production Method

Certified organic/biodynamic, hand‑harvested single‑vineyard fruit; cold soak and small-batch native‑yeast fermentations; matured ~11–14 months in French oak barriques (part new).

Founded by Rudi Bauer (est. 1996). Estate Bendigo single‑vineyard on quartz‑rich soils; certified organic & biodynamic. Known for expressive Central Otago Pinot Noir and méthode traditionnelle sparkling wines.
