Tasting Note

Bright dark-cherry and raspberry fruit with subtle floral and herb notes, mineral streaks, medium-full concentration, fine-grained tannins, fresh acidity and a long, vibrant finish.


Food Pairing

Western: roast duck, pork loin, mushroom risotto, lamb shoulder, aged cheeses. Asian: Peking duck, char siu (Cantonese roast pork), miso-glazed salmon, teriyaki duck, shiitake hot pot.


Production Method

Hand‑harvested biodynamic fruit; indigenous-yeast fermentation with ~7% whole‑bunch; matured ~12 months in French oak (≈28% new).
