Tasting Note

Black cherry, raspberry and forest-berry fruit with garrigue herbs, warm stone/mineral notes, cedar and coffee-bean oak; bright acidity, firm fine tannins and a saline, long finish.


Food Pairing

Western: roast duck, lamb, mushroom risotto, pork tenderloin, grilled salmon. Asian: miso-glazed fish, teriyaki chicken, char siu pork, shiitake noodle dishes, Korean BBQ (bulgogi).


Production Method

Cold soak for several days, fermented on native yeasts with extended maceration (~10–12 days), aged in French oak (mix of new and used) before bottling under screwcap.


Vineyard Info

Founded by Rudi Bauer (est. 1996). Quartz Reef farms Bendigo estate vineyards (Demeter-certified biodynamic) on clay, gravel and quartz soils in Central Otago.
